Acacia gum is the hardened sap of the Sahel acacia tree. Hand-harvested for more than 4,000 years, it is now an authorised food additive in the European Union under the code E414.
Its key property: it dissolves easily in water and remains low in viscosity even at high concentrations. This makes it the reference emulsifier for flavoured beverages and a highly sought-after coating agent in confectionery.
It has no marked taste and no disruptive colour, so it can be added without changing the sensory profile of your recipes.
